Wonton Wrapper Spinach Lasagna

Ok I have to start this by saying this is equivocally one of the best lasagna dishes I've ever had let alone made! I find that most lasagna with noodles (gluten-free or not) are very heavy as it is with pasta dishes.  Oh and by the way this particular one is not gluten-free but could be modified easily.  So because they are so heaving and I always feel cruddy afterwards; I virtually don't eat pasta much at all.  It's high in fat and a pain to make but this! So lately I have been trying mor...

A gem of a shopping find

Whoever said money can't buy happiness simply didn't know where to go shopping ~Bo Derek So in my last post when I mentioned that great little day trip or camping trip at Rock Glen and I was mentioning how I came across this great little find of a store.  Well really it's not "that" little, I think unfortunately somewhere in my years if something isn't department store size it equates to being small as opposed to simply smaller.  And this place has utilized absolutely every inch of their store ...

Stuffed Zuchinni Boats

As a vegetarian I am always in search of different veggie recipes and I have got to say I hit the jackpot with this one!  I have no idea why Ive not posted it before as I make it so often. : ) One of the things I really like about it is that its very forgiving and you can mix it up.  Obviously I don't eat meat but I did many years ago and something that would pair nicely with this is chunks chicken or even bacon mixed in with it.  So if you have leftover chicken one night you could pop it in ...

No Bake Oatmeal Bites (Easy modified to Gluten Free if you like)

This is  a super quick and easy little treat to make and again child friendly; they'd love to get their hands in there! You can modify these in so many ways to be more healthy or more of a treat; whatever strikes your mood that day.  Any of the ingredients can be left out or replaced; just be sure to keep in mind the end result of the texture.  IE if you leave out the hemp seeds then drop the Peanut Butter or Honey measurement just a tad. This is the non gluten free recipe but for those th...

Giving thanks

“Be present in all things and thankful for all things.” ~Maya Angelou~   Normally I would blog on Tuesday but of course I couldn't let the day go by without popping in a saying Happy Thanksgiving to all in our corner of the world here in Canada. I'm thankful for so very much and for those that know me know that I have had faced health challenges and I am so thankful to have come out the other side of them time and time again.  I truly have learned how to be thankful for each day and ...

A great gift idea!!

This is one of those things that I'll never forget as I was so touched when a client sent it to me.  It's a great fun little craft to make with your little one and give it to someone they love a special occasion or just because.  It's the American Sign Language sign for "I Love You"   At the dollar store you can buy the little foam pieces and a small piece of craft or or colored paper So on the foam just trace your child's hand and then cut it/them out.  It's great for ones a bit o...
