I forget where I recently saw this recipe but I decided to give it a go. The concept of it as a little “pick me up” is similar to s recipe I previously posted but most of the ingredients are actually different.
Super easy, super quick and a great one for getting your little ones to help with. As well as they are a perfect little treat through out the day that has those healthy elements to them.
Here’s what the original recipe called for and I’ll underline what I chose to use.
Ingredients:
1/2 cup carob powder (or cocoa powder)
1/2 cup maple syrup (or honey)
1/2 cup crunchy peanut butter (or almond butter) (Natural smooth Peanut Butter)
1/2 cup raw sunflower seeds
1/2 cup sesame seeds
1/2 cup oats
ground flax seed meal
Directions:
Mix all the dry ingredients together and fold in the peanut butter until mixed well. Here if you find it still a bit dry you can add all or some of the syrup/honey or keep it aside in a separate small bowl.
Roll mixture into bite size balls, and roll them in the syrup/honey and then into the shredded coconut.
Handy and tasty little snack ready to go!!
Personally I preferred the other No Bake Oatmeal bites I made over these and if I were to guess it would be because I found the cocoa a bit strong.
