Gluten Free (or not) No Yolks dish

This is one of those open the fridge, pull things out and hope for the best.   And if I do say so myself this was seriously tasty! Although I would've like a few more ingredients such as maybe some peas and tomatoes, I figured what I had was a good jump off point. Ingredients: 2 Onions 3 carrots 1 box baby spinach Veggie Chicken substitute (obviously you can use regular chicken) Garlic Salt Pepper Basil Parsley Oregano 1 tbsp Extra Virgin Olive Oil (EVO) or butter 4...

Cauliflower Veggie Pizza (gluten free or not-your choice!)

I’ve been a pretty quiet on the blog the last few weeks.  I've been trying to get my groove and keeps up on posts but then summer stepped in!  Between the busyness and the viruses it's certainly kept me off-line for the most part. You know how "they" always say that "its" going around; well I certainly hope that none of you or yours were privy to the "it" that went around this summer.  I have to say that was by far the most ill I've been in a very very long time.  A freaky viral thing that th...

Gluten Free whole grain bread.

One of the things I miss the most since having gone gluten-free is a really good whole wheat bread.  Not just whole wheat bread but one that can be eaten fresh or toasted.  Well I have to say I've go t it!! Oh my gosh this is by far the best Ive made thus far...whole what that is.  It's got a really great texture so it doesn't fall apart as soon as you pick it up or in the toaster which as you know is not fun.  You're hungry and waiting for that piece of toast, up it pops and you go to grab ...

Gluten Free Crunchy Oat Bars (do not need to be gluten free if you prefer)

I've been know a time or two to cook when stressed (just a time or two ;) )  Truth be told it is an amazing stress reliever and something that I love to do.  So poking around in the kitchen certainly isn't a hardship for me. This is my first go at these and they turned out amazingly tasty1  If I was to change one thing that would be to not roll them out quite as thin as I did...close but not quite.  It just resulted in them cooking a little quicker than anticipated and I really prefer things ...

Gluten Free Banana Walnut muffins

This was my first go at making these muffins and this is definitely one of those where you don't judge  a book by it's cover.  These taste sooooo much better then they look in the pictures.  Unbelievably by far the most moist gluten free recipe I have made so far. I'll enclose a link at the bottom to the original recipe of which I modified.  I didn't have all the ingredients and thought I would wing it and hope for the best.  Trust me when I sya if you try this you will not be disappointed! ...

No Bake Oatmeal Bites (Easy modified to Gluten Free if you like)

This is  a super quick and easy little treat to make and again child friendly; they'd love to get their hands in there! You can modify these in so many ways to be more healthy or more of a treat; whatever strikes your mood that day.  Any of the ingredients can be left out or replaced; just be sure to keep in mind the end result of the texture.  IE if you leave out the hemp seeds then drop the Peanut Butter or Honey measurement just a tad. This is the non gluten free recipe but for those th...

Fudgy Walnut Brownies (gluten free) – after the Kale chip disaster!

Merry Christmas Eve everyone!! It's Christmas eve day and I've got a few things on the go in prep for the big day....So I started off with the best of intentions in doing something healthy and different for a snack....Kale chips.  I stumbled on them on line and gave them a go today and what a mistake they were.  Firstly when it came time to flip them they looked like something you'd smoke, not eat.  Tobacco folks tobacco!  Reminded me of the days on the farm and the dried up tobacco leaves and ...

Gluten Free pancakes

Alright so the weekend is coming and I feel a Saturday morning comfort food breakfast coming on.  I’ve certainly been doing my best to transition into a gluten-free “Lifestyle”.  It’s certainly a tough changeover but not so much that the food isn’t tasty, cause trust me it is!  But it’s the whole learning curve that is the tough part.  I continue to play with the food and feel out what flours work well together, what works as binding agents (aside from the usual xanthum gum).  However luckily I ...

Quiche with a Sweet Potato Crust (Gluten free/Grain free…or not if you prefer)

I've always love a good quiche!  To me it's great to dinner ; it's relatively quick and easy to make and heats up great for breakfast.  You can mix things up a bit by changing the toppings/veggies but in this one I used spinach, mushrooms and Onions.  The possibilities are endless which is great if you have finneky little ones.  For that matter this recipe is very easy to break down into single servings using a cup cake time so you can make various ones at the same time with very little extra ef...
